Coriander seeds
Coriander is an annual herb that actually grows into what we know as Cilantro, The seeds have a citrus flavour when crushed, almost lemon like.
Coriander seeds are sometimes used in brewing certain styles of beer, particularly in Belgian witbier and other wheat beer styles.
When brewing wheat beers they are typically used with orange peels and ginger to add a citrus character to the beer.
Recommended dosage
The average 19 litre beer recipe requires 14 – 28g of coarsely ground coriander seeds.
They should be placed in a hop bag and added to the boil when 15 minutes or less remain.
Flavour intensity can be varied by the amount used, coarseness of grind, and the amount of time allowed to sit in the wort before chilling.
